First off I'd recommend upgrading to Slony-I 1.0.5.
To add a new table to a currently running set you need to do the following:

Create a new set, add the new table to this new set.
Sunscribe the new set.

Once subscription is complete, you can chose to merge this new set into the 
old one.  (This merge can only be done after the sunscription is complete)
